Roasted Balsamic Red Pepper, Bacon and Brie Sandwich

I always order the bacon and brie sandwich

     No humdrum ham and cheese sandwich for me.  I like my sandwiches with salty bacon, creamy brie, and the sweetness of the roasted red pepper drizzled in balsamic vinegar.  Put it in between two slices of your favorite bread or my personal preference, a baguette, and you’ve got it made.

I could eat this tasty sandwich for the rest of my life and I knew it was damn good when I wanted it for dinner after already eating it for lunch.  Luckily for me, I soon ran out of all the sandwich ingredients thus forcing me to make something different for lunch and dinner the next day.  Pathetic, I know but hey, have you seen this sandwich?  I mean…can you blame me?

As easy as you want it

As far as sandwich recipes go, this bacon and brie sandwich is fairly straightforward. Just fry up some bacon, slice up some cheese and add some roasted red pepper to it.  Now, if you don’t want to go through the steps of roasting, blistering, steaming, peeling and de-seeding a red bell pepper.  I understand.

For an easier solution, feel free to use jarred slices of red pepper. I usually find jars of red pepper slices in the Mediterranean section and have even found it in the Polish food aisle. The choice is yours on what to use but remember to not stress about it.  It is, after all, just a sandwich.

Preheat oven to the highest temperature. Wash and clean red bell peppers. Place in the oven and let cook until skin is blistering. Make sure to turn it over so that all sides are equally blistered. When equally charred on all sides, place in a lidded container. Seal it and let steam until cool.

When cool enough to the touch, peel off the skin and remove seeds from the inside.
Strips of roasted red bell pepper seasoned with vinegar, salt and pepper
Cut into strips about 1 in / 2 cm thick. Drizzle with 1-2 tsp of balsamic vinegar and season with salt and pepper.

Place sliced red pepper in a baguette along with thick slices of brie, crispy bacon, a drizzle of mayonnaise (optional) and a smear of Dijon mustard (optional).

Ingredients

  • 1 baguette (cut lengthwise)
  • 8 slices of streaky bacon (cooked)
  • a small wheel of brie cheese (room temperature)
  • 12 red bell peppers
  • 12 tsp of balsamic vinegar
  • mayonnaise (optional)
  • Dijon mustard (optional)

Instructions
